Ingredients:

1.5-2 lb chuck roast 

1-2 cups of beef stock or bone broth, depending on size of your pot (enough to cover roast halfway)

1/8 tsp black pepper

1/2 tbsp paprika

1/2 tbsp chili powder

1 tsp garlic powder

2 while onions 

1 red onion

4 cloves of garlic

1.5 cups of white vinegar 

3 tbsp sugar or Monkfruit 

1 tbsp salt 

1 cup yogurt

1 handful cilantro + cilantro for garnish

1 tbsp honey 

3-4 chipotle peppers + adobo sauce (this comes in a can)

Salt to taste 

avocado slices to serve

Recipe:

Shredded beef : 

  1. Pull Chuck roast out of the fridge and leave on counter to get to room temperature. 

  2. Pat dry with paper towels. 

  3. Season chuck roast with salt, pepper, paprika, and chili powder generously. 

  4. Cut onion in quarters and peel garlic, add them to Dutch oven along with your roast.

  5. Add beef stock or bone broth to pot and cover roast halfway with liquid

  6. Cook in over at 325F degrees for 3-3 1/2 hours or until it shreds with a fork

Pickled onions:

  1. Cut red onion into thin slices

  2. Dissolve salt and sugar (or sugar substitute) in white vinegar over medium heat

  3. Remove from heat as soon as salt and sugar dissolve

  4. Add onions and vinegar mixture to airtight container and store in fridge while roast cooks, the longer, the better.

Honey Chipotle Sauce:

  1. Combine yogurt, cilantro, honey, 1/2 white onion, 3-4 chipotle peppers in adobo with some of the liquid from the can, and salt to taste

  2. Blend until smooth
