Ingredients:
16-24 oz steak of choice (I went with NY strip and sirloin)
1 cup of cooked grain of of choice (I went with Bulgur wheat)
1 yellow onion
2 bell peppers (I usually go with red and green)
1 red onion
2 ripe avocados
1 lb of cherry or grape tomatoes
1 bunch of cilantro
2 limes
1 cup of yogurt
Recipe:
Let steak rest until it reaches room temperature, pat dry and season with salt right before putting the on the pan.
Preheat cast iron pan, you want the heat to be very high.
Cook steaks on high heat until medium rare center (125 degrees), about 3 min on each side. Remove from heat and let it rest.
Slice bell peppers and onion. Cook on medium high heat with 1 tbsp of avocado oil, stir every so often to avoid burning. Make sure heat is high enough to sufficiently brown the veggies.
Make your guacamole by peeling and removing the seed of 2 avocados. Mash with a fork in a bowl until smooth, but not too smooth.
Guacamole - Finely dice 1/4 of red onion and small handful of cilantro, add to guacamole with half a lime. Salt to taste, then add more lime if desired
Pico de Gallo - Slice tomatoes lengthwise and add to a bowl. Finely dice 1/4 red onion and small bunch of cilantro. Squeeze half a lime and salt to taste, add more lime if desired.
Yogurt cilantro sauce - In a food processor, add 1 cup of yogurt, a handful of cilantro, half a red onion, 1 clove of garlic, and optionally half a jalapeño. Purée until smooth.
Slice steaks and assemble bowl (grain of choice, steak, fajita veggies, guacamole, pico de gallo, and yogurt cilantro sauce)
